"Whenever I travel, the first thing I NEED when I return home to Hawaii is some poke and the beach! Spicy ahi was the first poke I ever tried, and it's always been my favorite ever since. It's excellent as a poke bowl, but I love scooping it up with some Maui onion-flavored chips!

Here's my version of the popular recipe".

INGREDIENTS:

1lb Sushi Grade Ahi

¼ Cup sweet Maui onions, minced.

½ Cup Green onions

2 Tablespoons Sesame oil

1 Tablespoon light soy sauce (Aloha Shoyu)

2 Tablespoons Saracha

2 Tablespoons Japanese mayo

1 Pinch of Hawaiian sea salt

DIRECTIONS:

1. Cut ahi into ½ inch cubes. You can go smaller if you like more sauce in every bite!

2. Combine the cubed ahi, Maui onions, green onions, sesame oil, shoyu, sriracha, mayo, and Hawaiian sea salt in a large bowl.

3. Mix until everything is combined.

4. Place in refrigerator, covered, for at least 4 hours or overnight.

5. Top with more green onion and serve with rice.
